Cauliflower tortillas

INGREDIENTS
- ¾ head cauliflower
- 2 large eggs
- 30 g fresh coriander, chopped
- Salt and pepperto taste
- 150 g corn flour
or whole wheat flour
PRÉPARATION
- Heat the oven to 190°C and line a baking sheet with wax paper.
- Cut the cauliflower into small, uniform pieces. Use a food processor to grind it.
- Place the cauliflower in a microwave-safe bowl and microwave for 2 minutes. Then place in some cheesecloth and squeeze out as much liquid as possible.
- Beat the eggs in a medium bowl. Add cauliflower, coriander, corn flour, salt and pepper to taste. Stir until you have a homogeneous mixture. Use your hands to form 6 small tortillas and place them on the wax paper.
- Bake for 10 minutes and carefully flip each tortilla. Return to the oven for an additional 5 to 7 minutes or until cooked through.
- Heat a medium frying pan over medium heat. Place a tortilla in the pan and press down lightly for 1 to 2 minutes on each side until brown. Repeat this procedure with the remaining tortillas.
