Cauliflower tortillas

INGREDIENTS

  • ¾ head cauliflower
  • 2 large eggs
  • 30 g fresh coriander, chopped
  • Salt and pepperto taste
  • 150 g corn flour or whole wheat flour

PRÉPARATION

  1. Heat the oven to 190°C and line a baking sheet with wax paper.
  2. Cut the cauliflower into small, uniform pieces. Use a food processor to grind it.
  3. Place the cauliflower in a microwave-safe bowl and microwave for 2 minutes. Then place in some cheesecloth and squeeze out as much liquid as possible.
  4. Beat the eggs in a medium bowl. Add cauliflower, coriander, corn flour, salt and pepper to taste. Stir until you have a homogeneous mixture. Use your hands to form 6 small tortillas and place them on the wax paper.
  5. Bake for 10 minutes and carefully flip each tortilla. Return to the oven for an additional 5 to 7 minutes or until cooked through.
  6. Heat a medium frying pan over medium heat. Place a tortilla in the pan and press down lightly for 1 to 2 minutes on each side until brown. Repeat this procedure with the remaining tortillas.
