INGREDIENTS
FOR THE TUNA CRUST:
- 60 g black and white sesame seeds, toasted
- 85 g pumpkin seeds, roasted
- 22 g pistachio nuts, roasted
- Salt to taste
FOR THE TUNA:
- 500 g fresh tuna
- 10 g mustard
- 13 ml sesame oil
- 15 ml soy sauce
METHOD
- Mix the seeds and salt in a bowl. Set aside.
- Slice the tuna into approximately 5 by 2.5 cm slices.
- Mix the mustard with 8 ml of sesame oil and the soy sauce. Dip the tuna into this mixture then coat it with the toasted seeds.
- Heat the remaining sesame oil in a non-stick pan and sear the tuna to desired doneness. (The World Health Organization recommends is the tuna be well done).
- Slice the tuna and serve
