INGREDIENTS

FOR THE TUNA CRUST:

  • 60 g black and white sesame seeds, toasted
  • 85 g pumpkin seeds, roasted
  • 22 g pistachio nuts, roasted
  • Salt to taste

FOR THE TUNA:

  • 500 g fresh tuna
  • 10 g mustard
  • 13 ml sesame oil
  • 15 ml soy sauce

METHOD

  1. Mix the seeds and salt in a bowl. Set aside.
  2. Slice the tuna into approximately 5 by 2.5 cm slices.
  3. Mix the mustard with 8 ml of sesame oil and the soy sauce. Dip the tuna into this mixture then coat it with the toasted seeds.
  4. Heat the remaining sesame oil in a non-stick pan and sear the tuna to desired doneness. (The World Health Organization recommends is the tuna be well done).
  5. Slice the tuna and serve
