Sweet Potato And Spinach Pie

INGREDIENTS

  • 30 ml olive oil
  • 4 medium sweet potatoes
  • ½ onion, finely chopped
  • 2 large cloves garlic, thinly sliced
  • 2 eggs beaten
  • 150 g fresh vegetables (kale, spinach, arugula)
  • ½ cup plain yogurt
  • 125 g feta
  • Salt and pepper to taste

PREPARATION

  1. Preheat oven to 180 degrees C.
  2. Peel and cut 2 sweet potatoes lengthwise (about ½ cm wide). Slice the other two.
  3. Add the oil to the pan and heat over medium-high heat. Place the sweet potato slices in the pan. Fry on both sides until tender.
  4. Remove and place on paper towel. Repeat until all sweet potatoes are cooked.
  5. In the same skillet, add the onions and garlic and sauté. Then stir in the vegetables and cook until they wilt. Place them on a cutting board and chop finely.
  6. Place cooked vegetables in medium bowl, add remaining ingredients and mix.
  7. Garnish a removable pan with cooked sweet potato. Then pour in the spinach mixture.
  8. Place in preheated oven and cook for 30-40 minutes.
  9. Once cooked, gently pass a knife between the edge of the pan and the sweet potato. Carefully remove the sides of the pan.
  10. Serve hot!
