Sweet Potato And Spinach Pie

INGREDIENTS
- 30 ml olive oil
- 4 medium sweet potatoes
- ½ onion, finely chopped
- 2 large cloves garlic, thinly sliced
- 2 eggs beaten
- 150 g fresh vegetables (kale, spinach, arugula)
- ½ cup plain yogurt
- 125 g feta
- Salt and pepper to taste
PREPARATION
- Preheat oven to 180 degrees C.
- Peel and cut 2 sweet potatoes lengthwise (about ½ cm wide). Slice the other two.
- Add the oil to the pan and heat over medium-high heat. Place the sweet potato slices in the pan. Fry on both sides until tender.
- Remove and place on paper towel. Repeat until all sweet potatoes are cooked.
- In the same skillet, add the onions and garlic and sauté. Then stir in the vegetables and cook until they wilt. Place them on a cutting board and chop finely.
- Place cooked vegetables in medium bowl, add remaining ingredients and mix.
- Garnish a removable pan with cooked sweet potato. Then pour in the spinach mixture.
- Place in preheated oven and cook for 30-40 minutes.
- Once cooked, gently pass a knife between the edge of the pan and the sweet potato. Carefully remove the sides of the pan.
- Serve hot!
