Sauce 1:Ketchup
Ingredients
- 75 cl tomato puree
- 1 tsp paprika
- 1 tsp Worcestershire sauce
- 2 tbsp vinegar
- ½ tsp ground cinnamon
- 3 tbsp cornstarch
- 1 tsp sugar or brown sugar
- 1 tsp salt
- 1 tsp. honey
Method
- Place all the ingredients in a saucepan, reduce, and thicken for 20 minutes, stirring regularly.
Sauce 2 :Mayonnaise
Ingredients
- 20 cl of oil
- 1 egg yolk
- 3 cl vinegar
- 1 tsp mustard
- Salt & pepper
Method
- In a bowl, whisk together egg yolk, mustard, salt, white pepper and vinegar.
- Whisk until the salt is well dissolved.
- Pour the oil in a small stream without ever stopping whisking until you get a nice homogeneous texture and not too liquid.
Sauce 3 :Algerian Sauce
Ingredients
- 8 tbsp mayonnaise
- 1/2 tsp cumin
- 1 shallot
- 1 clove garlic
- 2 tsp harissa or chili paste
- 1 tablespoon tomato paste
- 2 tbsp flat-leaf parsley
- 2 tbsp fresh coriander
Method
- Make a mayonnaise with the recipe just above.
- Washes and dries herbs and carves them.
- Finely chop the garlic and shallot.
- Mix herbs and condiments in mayonnaise. Add the cumin, harissa (or chili paste), mix and reserve in the refrigerator until ready to serve
