Quinoa and broccoli salad

INGREDIENTS

  • bowl quinoa, cooked
  • 1 bowl almonds, crushed
  • 300 g broccoli, cut into chunks
  • 20 ml extra virgin olive oil
  • bowl chopped herbs (dill, parsley, mint, basil, cilantro, chives)
  • Grated lemon juice and zest
  • Salt to taste

PREPARATION

  1. Crush the almonds in a food processor and set aside. Add the broccoli and stir until the pieces are not too small.
  2. In a large bowl, combine broccoli, almonds and quinoa with remaining ingredients and stir gently.
  3. Serve
