Eggs Pouches In Half An Avocado

INGREDIENTS
- 10 ml olive oil
- 80 g ham, cut into cubes
- 30 g onion, cut into a square
- 10 ml white vinegar
- 2 large eggs
- 50 g chopped tomatoes
- 60 g crumbled fresh cheese
- Coriander for garnish, optional
PREPARATION
- Heat the olive oil in a small skillet over medium-high heat.
- Add the onion and sauté for 2-3 minutes until softened. Add the ham and cook for another 2 minutes.
- Fill a small pot of water 3/4 and add the vinegar, then bring to a boil and simmer.
- Break an egg in a small bowl, then place the egg gently in water and poach it for 3 mins 30.
- While the eggs are pocketing, cut the avocado in half and and stone it.
- Gently place the poached eggs on top of the avocado halves and cover with a spoonful of the ham mixture.
- Add the chopped tomato, fresh cheese and cilantro, then serve
