Cold Pumpkin And Orange Turmeric Soup

INGREDIENTS

  • 1 onion
  • 600 g pumpkin/squash
  • 400 g carrots
  • Juice of 2 oranges
  • 1 tablespoon fresh turmeric
  • 5 g turmeric powder
  • 15g extra virgin olive oil
  • Salt and white pepper to taste

PREPARATION

  1. Peel and chop pumpkin, carrot, onion and turmeric.
  2. Lightly fry onion in skillet, add carrot, pumpkin and turmeric.
  3. Add water to cover mixture and boil for 10 mins.
  4. Add the orange juice and mix with a blender or whisk.
  5. Salt, pepper and serve.
