Cold Pumpkin And Orange Turmeric Soup

INGREDIENTS
- 1 onion
- 600 g pumpkin/squash
- 400 g carrots
- Juice of 2 oranges
- 1 tablespoon fresh turmeric
- 5 g turmeric powder
- 15g extra virgin olive oil
- Salt and white pepper to taste
PREPARATION
- Peel and chop pumpkin, carrot, onion and turmeric.
- Lightly fry onion in skillet, add carrot, pumpkin and turmeric.
- Add water to cover mixture and boil for 10 mins.
- Add the orange juice and mix with a blender or whisk.
- Salt, pepper and serve.
