Chocolate mousse

INGREDIENTS

  • 142 g chocolate 70% cocoa
  • 125 ml of milk
  • 250 ml cream

PREPARATION

  1. Chop the chocolate and let it melt in a bain-marie or microwave.
  2. In a saucepan, bring the milk to a boil. Slowly pour one-third of the hot milk over the melted chocolate. Then, using a rubber spatula, mix vigorously making small circles to obtain an elastic and shiny core.
  3. Add the second third of the milk in the same way and add the last third according to this method.
  4. Separately, in a bowl, beat the cold cream with a mixer until semi-whipped and doubled in volume.
  5. When the chocolate mixture is between 45- 50°C, add the semi-whipped cream and stir.
  6. Add the semi-whipped cream and mix. Divide into small glasses and refrigerate.
