Chocolate mousse

INGREDIENTS
- 142 g chocolate 70% cocoa
- 125 ml of milk
- 250 ml cream
PREPARATION
- Chop the chocolate and let it melt in a bain-marie or microwave.
- In a saucepan, bring the milk to a boil. Slowly pour one-third of the hot milk over the melted chocolate. Then, using a rubber spatula, mix vigorously making small circles to obtain an elastic and shiny core.
- Add the second third of the milk in the same way and add the last third according to this method.
- Separately, in a bowl, beat the cold cream with a mixer until semi-whipped and doubled in volume.
- When the chocolate mixture is between 45- 50°C, add the semi-whipped cream and stir.
- Add the semi-whipped cream and mix. Divide into small glasses and refrigerate.
