Black Bean Burger

INGREDIENTS

  • 500 g cooked black beans
  • 50 ml vegetable oil
  • 1 onion, finely chopped
  • 1 large green pepper, finely chopped
  • 3 cloves garlic, chopped
  • 100 g cashew nuts (also known as
  • Cashews or cashew almonds) toasted
  • 120 g crumbled feta or cottage cheese
  • 1 egg
  • 80 g breadcrumbs
  • Salt and ground black pepper to taste
  • Cheddar or Swiss cheese of your choice (optional)
  • 4-6 whole hamburger buns (toasted)
  • Ketchup or mustard at your choice (optional)
  • Sliced lettuce, onion slices or pickles (optional)

Preparation

  1. Heat 2 tablespoons of oil in a skillet over medium-high heat. Add the onion and green pepper and stir until the ingredients soften (about 5 minutes). Add the garlic and stir constantly for about 2 minutes. Pour the mixture into a large bowl.
  2. Place the cashews in a food processor. Add the onions and peppers
  3. Chop the beans and place in the onion and pepper mixture.
  1. Add egg and breadcrumbs; season with salt and pepper to taste. Knead gently with your hands
  2. With the mixture, form 6 to 8 loafsized burgers. Heat 1 tablespoon oil in a large skillet over medium heat and cook until golden brown and crisp (about 5 minutes on one side). Turn carefully and cook until the other side is golden brown (5 minutes longer). Add the cheese if desired.
  3. Spread seasonings to taste on top and bottom of hamburger bread
