Eggs Pouches In Half An Avocado

INGREDIENTS

  • 10 ml olive oil
  • 80 g ham, cut into cubes
  • 30 g onion, cut into a square
  • 10 ml white vinegar
  • 2 large eggs
  • 50 g chopped tomatoes
  • 60 g crumbled fresh cheese
  • Coriander for garnish, optional

PREPARATION

  1. Heat the olive oil in a small skillet over medium-high heat.
  2. Add the onion and sauté for 2-3 minutes until softened. Add the ham and cook for another 2 minutes.
  3. Fill a small pot of water 3/4 and add the vinegar, then bring to a boil and simmer.
  4. Break an egg in a small bowl, then place the egg gently in water and poach it for 3 mins 30.
  5. While the eggs are pocketing, cut the avocado in half and and stone it.
  6. Gently place the poached eggs on top of the avocado halves and cover with a spoonful of the ham mixture.
  7. Add the chopped tomato, fresh cheese and cilantro, then serve
