Minestrone Soup

INGREDIENTS
- 50 ml olive oil
- 80 g red onions, chopped
- 80 g celery, chopped
- 100 g carrots, chopped
- 100 g pumpkin, chopped
- 250 g canned red beans
- 250 g canned white beans
- 250 g tomatoes, diced
- 15 g tomato paste
- 300 g sweet potato
- 1 litre chicken or vegetable broth
- 5 g garlic, chopped
- 20 g parsley, chopped
- 100 g whole wheat pasta
- Salt at your choice
PREPARATION
- Heat the olive oil in a large saucepan. Add the onion, carrots, celery and pumpkin and sauté for a few minutes.
- Add beans, tomatoes, tomato paste, sweet potato, broth, garlic, parsley and salt to taste until boiling.
- Cover and reduce heat. Cook over low heat for 6-7 minutes.
- Add the pasta and simmer for 8-10 minutes or until cooked.
- Add salt to taste and serve warm with cheese on top.
