Minestrone Soup

INGREDIENTS

  • 50 ml olive oil
  • 80 g red onions, chopped
  • 80 g celery, chopped
  • 100 g carrots, chopped
  • 100 g pumpkin, chopped
  • 250 g canned red beans
  • 250 g canned white beans
  • 250 g tomatoes, diced
  • 15 g tomato paste
  • 300 g sweet potato
  • 1 litre chicken or vegetable broth
  • 5 g garlic, chopped
  • 20 g parsley, chopped
  • 100 g whole wheat pasta
  • Salt at your choice

PREPARATION

  1. Heat the olive oil in a large saucepan. Add the onion, carrots, celery and pumpkin and sauté for a few minutes.
  2. Add beans, tomatoes, tomato paste, sweet potato, broth, garlic, parsley and salt to taste until boiling.
  3. Cover and reduce heat. Cook over low heat for 6-7 minutes.
  4. Add the pasta and simmer for 8-10 minutes or until cooked.
  5. Add salt to taste and serve warm with cheese on top.
