Black Bean Burger

INGREDIENTS
- 500 g cooked black beans
- 50 ml vegetable oil
- 1 onion, finely chopped
- 1 large green pepper, finely chopped
- 3 cloves garlic, chopped
- 100 g cashew nuts (also known as
- Cashews or cashew almonds) toasted
- 120 g crumbled feta or cottage cheese
- 1 egg
- 80 g breadcrumbs
- Salt and ground black pepper to taste
- Cheddar or Swiss cheese of your choice (optional)
- 4-6 whole hamburger buns (toasted)
- Ketchup or mustard at your choice (optional)
- Sliced lettuce, onion slices or pickles (optional)
Preparation
- Heat 2 tablespoons of oil in a skillet over medium-high heat. Add the onion and green pepper and stir until the ingredients soften (about 5 minutes). Add the garlic and stir constantly for about 2 minutes. Pour the mixture into a large bowl.
- Place the cashews in a food processor. Add the onions and peppers
- Chop the beans and place in the onion and pepper mixture.
- Add egg and breadcrumbs; season with salt and pepper to taste. Knead gently with your hands
- With the mixture, form 6 to 8 loafsized burgers. Heat 1 tablespoon oil in a large skillet over medium heat and cook until golden brown and crisp (about 5 minutes on one side). Turn carefully and cook until the other side is golden brown (5 minutes longer). Add the cheese if desired.
- Spread seasonings to taste on top and bottom of hamburger bread
